Light in color, lemon yellow to pale yellow-green, with beautiful clarity like liquid glass.

Crystallization:

Owing to its high fructose content, crystallization is rare, extremely slow and very fine-grained; complete crystallization never occurs.

Tasting Notes:

Lightly floral, fruity, persistent aroma. Very sweet, hints of vanilla and almond, with balanced acidity. Fine flowery notes in the finish.

NOTE! Acacia honey comes from a plant called robinia-pseudoacacia (Black Locust). (A common name for the tree is “false acacia” which is why the honey is called acacia.)
